Tres Leches Cake Recipe

Ingredients:
6-8 eggs (depending on size)
- 2 sticks butter, softened
- ½ cup sugar
- 1 cup flour
- ½ teaspoon baking powder
- 1 lime
- ½ cup water
- 1 can (14 oz) condensed milk
- 1 can (12 oz) evaporated milk
- 1 cup heavy cream
- M&M’s or Chocolate Chips (optional)
- Whipped Cream (optional)
Directions:
- Preheat oven to 300 degrees.
- Separate eggs. Beat egg yolks with butter.
- Stir in sugar to egg/yolk mixture.
- In separate bowl, use hand-mixer to beat egg whites with juice from lime. Beat until the egg whites form peaks.
- Combine baking powder and flour, and mix into the yolk/butter mixture.
- Add whites to the cake batter, using a wooden spoon to stir. Once evenly blended, slowly add water into mixture.
- Put batter into greased pan.
- Bake at 300 degrees for 30 min, or until cake has browned.
- Let cool for 15 min. and then pierce cake with fork to allow milk to seep in.
- Pour condensed milk, evaporated milk, and heavy cream over cake, allowing the cake to absorb the milks like a sponge.
- Top with whipped cream & decorate with chocolate chips or M&M’s.
