Tres Leches Cake Recipe

    Ingredients:

  • 6-8 eggs (depending on size)
  • 2 sticks butter, softened
  • ½ cup sugar
  • 1 cup flour
  • ½ teaspoon baking powder
  • 1 lime
  • ½ cup water
  • 1 can (14 oz) condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 cup heavy cream
  • M&M’s or Chocolate Chips (optional)
  • Whipped Cream (optional)
    Directions:
  1. Preheat oven to 300 degrees.
  2. Separate eggs.  Beat egg yolks with butter.
  3. Stir in sugar to egg/yolk mixture. 
  4. In separate bowl, use hand-mixer to beat egg whites with juice from lime.  Beat until the egg whites form peaks.
  5. Combine baking powder and flour, and mix into the yolk/butter mixture. 
  6. Add whites to the cake batter, using a wooden spoon to stir.  Once evenly blended, slowly add water into mixture.
  7. Put batter into greased pan.
  8. Bake at 300 degrees for 30 min, or until cake has browned.
  9. Let cool for 15 min. and then pierce cake with fork to allow milk to seep in.
  10. Pour condensed milk, evaporated milk, and heavy cream over cake, allowing the cake to absorb the milks like a sponge.
  11. Top with whipped cream & decorate with chocolate chips or M&M’s.
